Thanks to Olivia, I was recently introduced myself to all of the amazing & delicious things that black beans can do. And, the time has finally come… I’m ready to share the tasty news with you.
Another reason I’m sharing the magic of black beans with you: We’ve been in Moab, UT for just over a month now and I’ve becoming addicted to this soup that they serve at a restaurant here. It’s not that expensive (I mean… it’s just beans), but I’ve been averaging 2-3 times a week so it’s starting to add up.
Plus, when someone else is making your food you really have no idea what’s in it… That’s why I decided it was time to make my own, and it’s vegan!
Disclaimer: This recipe makes SO MUCH soup, like, way too much for an RV and definitely too much for one person. I have no idea where I’m going to fit it all… but I’m kinda glad it made it such a large amount? The reward certainly fit the effort that I put in (so much chopping).
I am very pleased with the finished product. It’s delicious and it has a better texture than the restaurant version – it’s chunky and a little spicy. I think y’all are going to enjoy it, so make sure you try it out. You better hurry though… we’re running out of soup weather.
